Garlic Portahouse

I love steak just like everyone else, but to be honest, I wouldn't pay $40 for a average steak in the restaurant unless that is premium cut of steak. But  how to cook a restaurant quality go steak at home? There are some tricks with minimum efforts.

Today I am going to show you my version of steak for just under 10minutes work.

You Need

250gram porterhouse steak
Garlic (sliced and fry it until golden crispy)
Master food garlic steak seasoning 1 tablespoon
Master food garlic salt 1 tablespoon
Rosemary 1 stalk
Lemon zest 1 teaspoon
Olive oil 2 tablespoon


Prep time: 2 Minutes
Cooking Time: 3-5 minutes

1. Marinate steak with olive oil, steak seasoning and salt for 5 minutes ( Make sure steak is in room temperature).
2. Heat up the pan for 3 minutes until it is smoky hot.
3. Place in the steak, and turn it over every 30 seconds, cook it for 3-5 minutes according to your preference.
4. Let it sit for at least 3 minutes, at the same time, put rosemary and lemon zest  into the pan, and let the remaining heat to infuse the favour in,  and then pour in juice from the resting steak.
5. Slice up the steak and put into the plate, pour over the infused juice., and sprinkle fried garlic over steak.

Creamy Avocado Dip

Dipping Sauce is one of the heroes when we having crackers or chips,  it literally brings the snack to another tasting level rather than just the a piece of dull biscuit. The Avocado dip that I am sharing today, it's full of freshness from mix herbs, and also the refreshing taste from lemon and jalapeno.


You Need
  • 1 X Sliced avocado
  • 1 cup X low-fat sour cream
  • 1/2 cup X  Coriander
  • 1 tablespoon Lemon juice
  • 1 X Jalapeno
  • 1/2 teaspoon coarse salt
  • crackers/corn chips/Hot chips, for serving

Prep Time: 3 Minutes.
1. Sliced avocado into small cubes.
2. Cut Jalapeno into half, and removes all the seeds.
3. In a food processor, combine avocado, sour cream, Coriander, Lemon juice, jalapeno, and salt. Blend it until smooth, you can add in more salt or lemon juice according to personal preference.

PS. fridge the sauce for 30 minutes, and oven baked crackers or corn chips for 3 minutes, it would tastes so much better when you dipping it with the cold  sauce.
Hainanese Chicken Rice is a MUST order dish when I visit Singapore every time, and I guess I would never get sick of it. There are some techniques required to make a nice chicken oil rice and soft chicken,  but all you need is patient. Today, I am going to show you a simple version of it.

You Need ( 2 serves)
Chicken Maryland x 1
Jasmine Rice x 2 Cups
Garlice X 1 whole Garlic Clove
Ginger X half
Spring Onion Root X 5
Pandan Leaves

Chicken Soy Sauce
shao xin wine x 1 tablespoon
light soysauce x 1 tablespoon
sesame oil x 1 teaspoon
sugar x 2/3 teasoon
dark soy sauce x 1 teaspoon

Chilli Sauce
Red Chilli x 3
Lemon/Lime Juice x 1/2 Table spoon
Mince Garlice x 1 Tablespoon
Salt x 1/2 teaspoon
Chicken Stock

Ginger Sauce
Peanut oil x 3 tablespoon
Mince Ginger x 1 tablespoon
Chopped Spring Onion x 1 tablespoon
pinch of salt

1. Bring a large pot of water to the boil, add 3 big pieces of ginger, 5 cloves of garlic, 3 stalks of spring onion, pinch of salt, then add the chicken in, and leave it for 10 seconds and take it out (repeat this step for 3 times),  and then leave the chicken to boil for further 5 minutes. off the heat and cover with a lid and leave to stand in the water for 45 minutes.

2. Remove the chicken from the water. chop it up and pour over the soy sauce on the chicken, leave to cool. (microwave it for 40 seconds before serving it)

3. Blend chilli, garlic and ginger in a food processor, add ½ tablespoon of chicken stock and lemon/lime juice and salt to taste.

4. To make the ginger sauce, place spring onion in a empty saucer, sprinkle salt over the top, fry mince ginger with oil for 1 minute, pour into saucer, let the remaining heat to cook over spring onion.

5. To make the chicken rice, wash and drain the rice,  heat the chicken fat in a pan until it releases oil, then add the ginger and garlic and fry until golden. Discard any solid pieces of fat. Add the rice and salt and stir-fry for 3 minutes. Transfer the rice to a rice cooker, and add in pandan leaves, chicken stock ( the usual amount of water you used to cook rice) and the pandan leaves if using.

6. To make the soup, add in salt and spring onion and fried shallot with the remaining chicken stock.

Cantonese Fried Egg Noodles

If you do know a little bit more about Cantonese culture, you would know what we love to eat in the morning. one of the classic combinations is plain porridge, Deep-fried dough and Fried egg noodles. Chinese love to eat rice, they can have it at any time of the day, it's just like bread, cereal, and potato in western country. Plain porridge itself has not much taste, and this is where all the side dishes came from.

Today I am going to show you how to make a classic Cantonese fried egg noodles in just 15 minutes.



You Need

Egg Noodles  X 2
Bean sprouts   X 1 Cup
Spring onion (sliced) X 1 Stalk
Sesame Oil X 2 Tablespoon
Dark Soy Sauce X 2 Tablespoon
Chili Oil (Optional)
Roasted White Sesame  x 1 Teablespoon

1. Cook bean sprouts for 1 minute,Cook Noodles for 2-3 minutes, drain it and set aside.
2. Heat up the Pan, add in Sesame oil, noodle and bean sprouts, fry for 1 minute, add in soy sauce, followed by spring onion, fry for another minute.
3. Plate up, and sprinkle roasted white sesame and chili oil on top of it.

Cheesy Bacon Macaroni

Here is a simple macaroni recipe for a quick lunch, Bacon and cheese, who doesn't love it, right?

You Need

Macaroni x 1 Cup
Bacon x 2 strips (sliced)
Fresh/Dried Chives (Optional)

Cooking Cream 1/2 Cup
Kraft Full Cream Cheese x 2 slices
Salt & Black Pepper

Seasoning (One Teaspoon each)
Garlic Steak Seasoning
Piri Piri (Hot) Seasoning
Paprika Ground
Turmeric Ground

Prep Time: 2 Minutes
Cook Time: 10-15 Minutes

1. Boil macaroni for 7- 8 minutes with olive oil and pinch of salt, then drain it and set aside.
2. Fry up the bacon for 3 minutes and add in all spices as above, fry for another 3 minutes.
3. turn to low heat, add in macaroni and 1/2 of cream, stir it through.
4. Once everything combined, add in cheese slices, let it melt with macaroni.
5. Once cheese melt and combined, sprinkle chives and black pepper over the pasta.





Five Spices Roasted Pork

Succulent pork belly with crispy chunky cracker isn't it the food from haven? This simple roasted pork recipe is very easy to make and goes so well with Chinese vegetables and rice.

You Need
1kg Pork Belly
White vinegar

Marinate sauce
Chinese five spices x 1 Tbs
White pepper x 1Tbs
Chicken stock powder x 1Ts
Chinese Rice Wine x 1Tbs
Sugar x 1Ts
Salt x half Tbs

Prep Time: 15 minutes
Cook time: 60 minutes

1. Place pork skin down into hot water, let it simmer for 10 minutes.
2. Dry it up with paper towel, marinated the meat, please do not touch the skin to avoid colour turns black later.
3. Use pork tenderiser to pop as much holes as possible, and brush one layer of white vinegar on pork skin.
4. Leave it in the fridge over night.
5. Take it out and let it set until room temperature, preheat oven to 200 degree, put the pork in for 40minutes, and raise the temperature to 220 degree for 5-8 minutes.

Oven is various from one to another, please keep an eye on with the last 5-10 minutes.


一斤帶皮豬腩肉,白醋

醃料
五香粉 一湯匙
白胡椒粉 一湯匙
雞粉 一茶匙
紹興酒 一湯匙
糖 一茶匙
鹽 半湯匙


1. 煲滾熱水,將帶皮一面反轉,浸泡十分鐘。
2. 抹乾水份,將醃料搽上肉,絕對不要掂到豬皮,會變黑。
3. 用扎肉器在豬皮上扎密孔,愈多愈好,再掃上一層白醋。
4. 放入雪櫃醃過夜,不用包保鮮紙,要利用冷氣吸乾水份。
5. 將肉放至室溫,預熱焗爐至200度後,放入中層焗45分鐘,轉上層焗5-8分鐘。
6. 取出後放至十分鐘便可切成小塊。

每個焗爐都不一樣,注意轉上層後要注意豬皮的變化,以免燒焦。

Beef Stroganoff (沙拉醬牛肉)

Hey Everyone, hows your autumn goes so far? I guess most of you became lazy to spend time in the kitchen at this time of the year. So is it a  30minutes hot meal sounds simple enough to you? If yes, grab your apron and cook this beef stroganoff off with me!!!!!!!!!!!!!!!!!  



You Need

250gram x Rump Beef (Cut into cube)
100gram x White Mushroom (Sliced)
3 x peeled Tomato
250ml x Beef Stock
2 tablespoon x Tomato Puree
Sour Cream
Baby Spinach (Marinated with few drops of olive oil and vinegar)

Prep Time: 5 Minutes
Cook Time: 20-30 Minutes

1. Marinated beef with dash of oil, potato starch,2 tbs soy sauce.
2. Heat up your pan, place olive oil in, and fry beef cubes for 2 minutes, and follow by mushroom, cook for further 2 minutes.
3. Add in 250ml beef stock in pan, 2 tbs of tomato puree, stir through until it becomes smooth.
4. Add in peeled tomato, and simmer it for20-30 minutes with lid on.
5. take off the lid, and add in 2- 3 tbs sour cream, stir it until combined, turn off your fire.
6. place up with baby spinach and sprinkle some black pepper, and serve with rice.



沙拉醬牛肉

1. 牛肉用油同生粉,少許醬油略醃, 熱鍋加入涼油炒2分鐘,加入蘑菇炒2分鐘.
2. 加入牛肉濃湯一粒&水250ML, 兩湯匙茄膏攪拌至溶解後, 加入完粒去皮蕃茄, 小火加蓋慢煮20-30分鐘.
3. 開蓋, 加入2-3湯匙SOUR CREAM攪拌好後熄火, 加入小菠菜裝飾.

Soft Boiled Egg (日式溫泉旦)

Recently I have been eaten too much western breaky and ordinary Chinese porridge.so I want to have a change.  Instead of having bring poached/scramble/fried egg, we can have some revolutions with our egg menu. How about some oozing Japanese Soft boiled egg with a bowl of rice and miso soup?


You Need

700G egg x 1
Chopped spring Onion
Korean instant seaweed
Roasted sesame
Japanese Chilli Powder
Sauce (Japanese Cooking wine & Soysauce 1/2 teaspoon each)
White Pepper

Prep Time: 1 Minutes
Cook Time: 4-8 Minutes

1. Option A: Place egg into a pot with cold water, bring to boiling then cook for another 2 minutes.
    Option B: Once water is boiled, turn off fire, place egg in with lid on for 8 minutes.
2. Take it out and place it in ice water for at least 2 minutes, peel off shell.
3. Pour in Sauce, and sprinkle over with spring onion, white pepper, sesame and chilli powder.



最近覺得食西式中式的早餐都食膩了,見過好多日本旅遊節目,好多日本人早上都係一個溫泉旦加上白飯,配多一個味噌湯,咁就攪掂. 既然係咁簡單,不如自己試試都無妨.

 一隻700G的雞蛋.
蔥花
即食
調味汁(半茶匙昆布醬油, 半茶匙味啉,芝麻幾滴, 才許白胡椒)
烤芝麻
日本七味粉

1.A:冷入加旦,水煮滾後再煮兩分鍾。 B: 水滾後,加上雞蛋熄火焗8分鐘.
2.盛出浸入冰水後,剝殼。
3. 倒入調味汁.
4.潵上七味粉,白胡椒,芝麻,蔥花,韓式即食紫菜。



不過雞蛋個個都大不同,要煮既時間都有不同. 但大致上都係1分鐘的差別.

Cream cheese mushroom Puffy Pie (乳酪芝士蘑菇批)

I hope you guys like my recipe from the previous post, and I would like to recommend you another afternoon tea snack - Cream cheese mushroom Pie.You don't have to use cream cheese but others, but I just found that cream cheese goes quite well with baby spinach.

You Need

1 Puff Pastry Sheet
1 large mushroom (diced it)
1 tbs x plain flour
1 tsp x salted butter
1 cup x milk
1 tsp x dried chives
2 cup x baby spinach
2 tbs x cream cheese or cheddar cheese
1 egg (Beaten)

Prep Time: 10 Minutes
Cook Time: 20 Minutes

1. Heat up your pan, and pan fried until it becomes soft.
2. Add in flour and stir fry for 1 minute, add in butter, milk and chives fry for another minute, rest aside.
3. Divided pastry sheet into 6 portions, put in baby spinach, 1 cube of cream cheese and mushroom, get wrap.
4, Before put into oven, brush egg on top of pastry, and bake it for 20 mins at 200 degrees.

PS. I am a healthy diet person, so I prefer low salt & sugar in my cooking, but if you like rich favor, you can add in pitch of salt or some chicken stock.

乳酪芝士蘑菇批

 1. 一個大蘑菇切丁,加牛油炒軟後, 加入1茶匙面粉炒勻後,加入牛奶及雞粉調味,炒至汁濃熄火。
2.Puff Pastry 解凍後加入小菠菜,乳酪芝士同蘑菇,依喜好包成自己喜歡的樣子。
3.掃上蛋液,放入焗爐,200度(Fan Forced) 20分鐘






Your weekend Party food - Cheesy Nachos (墨西哥烤䅇米片)

Boyfriend and I were always lazy to cook on weekend, and he had an awesome thought for our weekend lunch, and it's amazing and so easy to make, highly recommendation party food for guest as well. Nachossssssss!!! But lets make it more upper class and more presentable.

You Need

1 Pack x Nacho chips
1 Jug    x Nacho sauce
1 x Jalapeno pepper (Dipped in white vinegar for 10 minutes)
Cheese (Fresh Shredded Cheddar or Mozzarella)
Fresh Chives (Optional)
Sour Cream (Optional)

Prep Time: 5 Minutes
Cook Time: 1-3 Minutes

1. Pour one whole packet of chips into a large plate, shredded one layer of your favorite cheese on the top.
2. Add in the sauce, and put marinated Jalapeno pepper on it, shredded one more layer of cheese.
3. put in microwave for 1 minutes or in oven with 200 degrees for 3 minutes.
4. Add few spoons of sour cream and fresh chives.

Isn't it awesome to get this cheesy nachos ready in less than 10 minutes, I am sure people in all ages would love it. Enjoy.


墨西哥烤䅇米片

1.一包粟米片,粟米片醬,辣椒片,車打芝士,酸乳酪。
2.將粟米片倒入碟中,淋入醬汁,磨入新鮮車打芝士 ,加入用白醋浸過十分鐘的辣椒片,再磨入一層芝士。
3.放入微波爐中叮半分鐘或放入預熱焗爐中200度焗三分鐘。
4.取出後加上酸乳酪同新鮮干韮菜 (chives)

Vanilla Souffle (雲呢拿梳乎厘)

I believe dessert is the one of the  most unrepresentable foods for girl. Which one is your favorite? Today, I am going to teach you to make a classic vanilla souffle. It's a lovely dessert with light texture that would melt in your mouth, but one thing you have to remember is DONOT OPEN YOUR OVEN while it cooks, this is a golden rule in baker's world, especially when you making souffle, as this dessert requires the heat to brings out it's gorgeous  presentation.



You Need

  • 2 eggs (divided yolk and white)
  • 2 tablespoons salted butter, melted
  • 4 tablespoons caster sugar
  • 125ml milk
  • 1 tablespoon plain flour
  • 2 teaspoons vanilla extract 
  • Vanilla powder and cocoa powder
Prep Time: 15Minutes
Cook Time: 20 Minutes

1. Preheat the oven to 165 degree (Fan Forced). Butter a large soufflé dish and roll 2 tablespoons sugar throughout the dish, making sure to cover all the interior surfaces,set aside.

2. Bring milk to just steaming in a medium saucepan set over low-medium heat. Melted butter and add in flour to stir together,  add in hot milk and combine it until completely smooth, set aside and let it cool down.

3. Add in 2 egg yolks accordingly to the milk mixture when it cools down, and add in vanilla extra to mix it.

4. In a separate bowl, beat the egg whites on medium high speed until they become foamy, and then add the remaining 2 tablespoons sugar. Continue beating the egg whites on high speed until they hold stiff glossy peaks.

5. Gently stir egg whites into the vanilla mixture (1/3 each time), then carefully fold in the remaining whipped egg whites, and place it in dish.

5. Place all dishes in a large plate, and pour hot water into the plate (at least half full), and place the whole thing into oven with 165 degrees, 20minutes or until the soufflé has risen with a crusty exterior. Serve the soufflé with cocoa powder.

蛋白 2隻
蛋黃 2隻
麵粉 1湯匙
糖 2湯匙
牛奶 125毫升
牛油2湯匙
雲呢拿油 (vanilla extract, 香草精) 少許


做法:


先把焗爐預熱至165度(fan forced)把牛奶座熱或用微波爐弄暖,備用。
準備好三個容器,用牛油抹塗內側,再沾上白糖,備用。
1.將牛油入鍋加熱,然後加入篩過的麵粉攪勻,拌入已座暖的牛奶,然後加雲呢拿油拌勻,放涼後將蛋黃逐一加入攪勻。


2.把蛋白打至起泡後,加入 1湯匙糖打至企身。


3.把第 2項的混合物分三次加入1混合物中拌勻,倒入杯中,八成滿就好了。用手指在杯邊刮一圈。
4.放入預熱的焗爐中,焗約20分鐘 或至升高(視乎焗爐的熱力而定)。


5.出焗爐後決潵上雲喱拿粉同可可粉。

HAMMER AND TONG

最近墨爾本話題最高的一間CAFE. 位於FITZROY,呢一個區嘅CAFE真係多到日日食都要食幾個月, 但係既然係TALK OF THE TOWN,我同男朋友就走左入黎湊下熱鬧. 因為好怕要排隊, 所以我地八點都未到就到左,成為第一位客人.

要試一間CAFE的咖啡水準如何, 叫豆奶咖啡就好容易分得出,因為豆奶脂肪唔多,要打得好,很需要技術.我同男朋友分別叫左SOYA LATTE同SOYA CAPPUCCINO. 泡沫打得很細滑, 入口濃郁,根本就唔需要加糖.


呢度最出名就係佢嘅軟殼蟹漢堡包 ($12),果然值得佢出名,佢既包身軟到好似食緊牛角包一樣,而軟殼蟹.處理得好好, 冇平時日本餐廳食到既咁多炸粉, 咬落好輕,我係唔需要切好都完好無缺, 而且唔好周身汁, 女仔一定鍾意食. 男朋友就叫左一個傳統腸仔旦Muffin配以咖啡煙肉巳泡沫醬($16),  泡沫醬口感好特別,一開始食你唔會覺得有味,但將所以材料HM一啖, 好味道.

 菜單仲有好多好特別的選擇, 一定會再番黎, 回頭指數 x 4

Sizzling Korean Beef (韓式燒牛肉)

Korean BBQ shop is more and more popular than before. I remember when I first came to Perth, there isn't any korean bbq shop in the town; After thirteen years, I can see at least one or two shops in each suburban, and now I moved to Melbourne, OMG, there are even more shops around, such as G2, Toodouri Korean BBQ. But, if you are lazy to go out or hate the Bbq smell stay on your clothes, you may make your own at home just follow a few simple steps here.




You Need

Rump Steak (250g, Slice and martinate with oil, soy cause, white pepper, sugar and plain flour)
Leek or Spring Onion (Optional)

Sauce 1 (Mix up)

1 Tbs x Sesame Oil
1/2 Ts x Salt
1/2 Ts x Japanese Chilli powder

Sauce 2












Prep Time: 10 Minutes
Cook Time: 5 Minutes

1. Marinate Beef slices for at least 10 minutes
2. add two sauces ready into 2 small plates.
3. add in the Beef slices into a hot pan with Sesame oil or olive oil, fry one side until it becomes brown, flip it to the other side and cook for another 1 minute, place it onto a plate.
4. Use the left over oil to fry leek or spring onion cook for another 1 minutes, put on top of the beef.

PS. This BBQ Beef goes really well with rice and korean seaweed and lettuce, you just need to simply use lettuce to wrap the beef & sauce, one bite of beef, one bite of rice & Seaweed, YUMMMMMMMMMMMM!!


韓式燒牛肉
1. 牛肉用生抽X油X生粉各一茶匙, 少許糖 X 白胡椒醃10分鐘.
 2. 大火涼油,加入牛肉煎至兩面深色後上碟,落大蔥入鑊爆一爆上碟.
 3. 兩種調味汁, A (1湯匙麻油 x 半茶匙鹽 x 七味粉), B (綠色盒裝韓式燒烤醬). 




Silky Steam Tofu & Crispy chili Sauce (蔥油豆腐)

This is a very easy Chinese home cooking for all age of people. Tofu is an amazing food which is low in calories, High in Protein and some other elements; it also goes well with any types of cooking, such as deep fried, steam, stuff tofu or soup.

Today I am going to show you guys the most simplest way to cook tofu with my home made chilli oil oil.


You Need

Pork Mince 250G (Marinate it with Chinese wine, soy sauce, sesame oil 1ts each)
Spring onion 2 stalks (roughly chopped)
Silky Tofu   1box
Home Made Chilli oil (Please refers to previous recipe)
Sesame oil (1ts)
Light Soy Sauce (2tbs)
Dark Soy Sauce (2ts)
Chinese Wine (2ts)
Chicken Stock 100ml
Starch 2ts mix with 2tbs water

1. Pour the whole piece of tofu into a plate, steam it for 10 minutes.

2. Add in pork mince with oil into a hot pan, fry it until it turning white, mix in sauce and cook for 5 minutes.

3. Add in starch water before turn off the fire, stir it around until sauce becoming thicken.

4. Pour in sauce on top of the tofu, garnish with spring onion and chilli oil.

蔥油豆腐
1. 原塊滑豆腐中火蒸10分鐘.
2. 將紹興酒x生抽x蠔油(各1湯匙), 糖x麻油(各一茶匙),爆熱後加入豬肉碎炒熟後淋上豆腐.
3. 再爆香青蔥,同自家製辣椒油一同淋上. 這個豆腐快捷又健康, 非常岩上班人士.

Tomato curry chicken with Greek yogart (鮮茄辣咖哩雞)

I cant believe autumn can be this cool, It's only 1st of May. so I think stew, soup or curry are all returning to our diner table soon. Since I am a Chinese, I am always love to have a bowl of rice at night, and curry is always been the best partner with rice. Come and try this Mediterranean favor curry tonight, I hope you would love it for this coming up winter.





You Need

2 pieces x Chicken Thigh Fillets ( 1-2 cm cubes)
3 Tomatoes (peeled) or 3 tbs Tomato puree
1 large Onion (finely diced)
3 cloves x Garlic (finely diced)
2 medium potatoes
2 tbs x Chicken stock powder
1 tbs x Soy sauce
1 tbs x Greek Yoga rt
40ml light cream
20ml starch water
1.5 Litre water or Chicken Stock

1ts Each for following spices
Coriander Seed Ground
Garam Masala
Cayenne Pepper
Chillies Ground
Cloves Ground
Turmeric Ground

Prep Time:  15Minutes.
Cook Times: 30-40Minutes

1. Heat up fry pan and pour in olive oil, add in garlic and onion, fry it for 3 minutes and add in all the spices from photo below, fry for another 7minutes.
2.  Keep frying the mixtures until it becoming soft, and add in tomatoes or tomato puree, stir with the mixtures, then add in chicken powder and soy sauce.
3. After the mixtures is done, add in the chicken and fry with the curry mixture for another 10minutes.
4. Remove the curry from pan and move it into a pot, add in water and potatoes, boil it for 30minutes on medium heat.
5. now you may add in cream and starch water, stir the curry until its thicken.
6. Place curry into the plate, garnish with black pepper, 1tbs of  Greek Yogurt and Spring onion (Optional).


鮮茄辣咖哩雞

2塊 雞腿肉
3個  番茄  (或3湯匙茄膏).
1個  大洋蔥.
3塊  蒜蓉
2個  薯仔
2湯匙 雞粉
1湯匙 醬油
40毫升 淡忌廉
20毫升 茨粉水
1.5公升的水或高湯.
圖中香料各一茶匙.


1.雞腿肉切大塊, 番茄,洋蔥,蒜蓉切碎。
2.橄欖油入鑊,加入洋蔥蒜蓉炒3分鐘後, 加入香料炒7分鐘後,加入鮮茄(或者茄膏)。
3.加入雞粉和醬油,繼續炒香,待所有材料都與醬料混合好 後,加入雞脾肉炒至白身。
4.加入1.5公升的水,薯仔煮大概半小時後,加入淡忌廉50毫升,適量茨粉水煮至汁濃.

PS.用圖中香料腌制雞脾肉過夜味道更濃郁。咖哩上碟後拌以一湯匙的Greek Yogurt&蔥花,黑胡椒碎會更美味  .





Home Made Crispy Chilli Oil (自家制脆香辣椒油)

I am a massive fan of spicy food even though my body can't handle too much. However, there are too many spicy Products in the market that contains msg, preservatives or high in salt. So, why not make your own Chilli oil as a healthier option?

You Need 

1 x Fresh Red Chilli
6 x cloves peeled Garlic
One piece of Ginger
4 stalks x spring onion root
Two teaspoon x dried Chilli flake
Three teaspoon x fish sauce
One tablespoon x sesame oil
5 grams x White pepper
5 grams x Salt

Prep Time: 5 minutes
Cook Time: 30 minutes


1. Mix all ingredients into blender, mix it until fine.
2. Heat up the pan, pour in olive oil and mixtures fried for one minutes, then turn into low heat.
3. Keep stirring the mixture for 30minutes or until it becomes crispy.
4. Wait until it cools down and store in the jug.

P.S you may need to add in oil every 10minutes to avoid mixture becoming burnt.


自家制脆香辣椒油

6辦蒜頭,
一片姜,
4束蔥頭,
一條生辣椒,
兩茶匙干辣椒碎,
三茶匙魚露,一湯匙麻油,
鹽和白胡椒粉少許

2. 所有材料放入攪拌機打碎.
3. 熱鍋後加入油和攪拌好的材料大火炒一分鐘後轉小火炆炒至深紅同脆身,大約三十分鐘.
4.放涼後入密封瓶,可存放兩至三星期.

Potato leek soup with sexy bacon (煙肉薯仔濃湯)

People love potato in general, chips, wedges, photo pie; So, I guess no one would say NO to potato soup in winter. Get yourself warm up with my version of Potato & Leek Soup.



You Need
3 Large Potato (Cut into 1cm cubes)
1 leek  (thinly sliced)
Chicken stock or water (enough to cover potato)
Bacon (1 long strip, Don't cut off the fat, they are the BEST)
Thickened/Light cream (40ML)
Salt & Pepper


Prep Time: 15 Minutes
Cook Time: 30 Minutes


1. Add potatoes into the pot and pour in chicken or water, cover the lid and boil it until soft. 
2. In the meanwhile, fry leek until it becomes soft and add into the potato after it has been boiled for 10 minutes.
3. Mash potato roughly and move it into a blender, blend it until smooth.
4. Pour it back into the pot and add in cream to simmer it for another 5 minutes.
5. Cut bacon into a few thin long strips., fry bacon in a splash of olive oil until crispy.
6. Place soup into a plate and sprinkle over with half teaspoon of cream, pitch of salt&pepper, crispy bacon and thinly sliced leek.



煙肉薯仔濃湯 
1.薯仔一個,加一湯匙鹽煮二十分鐘後盛出放涼。
2. 將半個洋蔥,兩條煙肉粉軟。
3.將1&2加入攪拌機,加白胡椒粉和鹽各一茶匙,兩湯匙忌廉,200ml攪勻至平滑。
4. 將一條煙肉切成幼長條煎至干身加入蔥絲煎十秒,放入湯中上碟。

Char-Grilled sweet corn with tuna Salad (甜栗吞拿魚火箭葉沙律)


Prefect salad for someone who likes healthy diet, dont you think so?
Tuna gives you daily omega 3 supply, sweet corn fills you up along with some green.
Enjoy it.


You Need

Tuna (one can in spring water)
Roket & baby Spinach (1/3 packet)
Sweet corn
Garlic (Five cloves)
Red onion (1/3)
Olive oil (two tbs)
Tabasco Chili Sauce (few drops)
Salt & Black Pepper (personal preference) 


Prep Time:  5 Minutes
Cook Time: 30-40 Minutes


1. Put corn into a hot grill pan with olive oil (1 tbs), let it grill for 30-40 minutes, keep turning it every 5minutes to avoid burning.
2. In the meanwhile, thinly slice red onion, wash once with water, then dry it with paper towel, put aside.
3. put the whole garlic clove (skin on) into the grill pan, roast it for 10-15mintues, put aside.
4. put rocket, baby spinach, red onion and tuna into a deep bowl, mix with salt & pepper, olive oil and tabasco sauce. (try not to break the tuna pieces)
5. once the corn is done, slice it and mix it into the salad and roasted garlic.

Chili Oil Dry Dumpling (紅油炒手)



Well well well, it's winter time again, no matter how much we do not like the cold, we just cant run away from it. So what is a prefer quick meal to warm your night - Dumpling for sure. It's quick, easy to cook and fills you up easily. Let's get these lazy kids ready for tonight.

Bak Choi Pork Dumpling  x  Ten
Spring Onion                    x  personal preference
Chiu Chow Chili Oil          x  one tbs
Sesame Oil                       x   one tbs
Soy Sauce                        x   one tbs
White Vinegar                   x   two tbs

Prep Time: one Minutes
Cook Time: Five Minutes

1. Place dumplings into boiling water, cook it for 3 minutes with lid on, and 2 minutes without lid.
2. Drain it, put it into a bowl, mix up all the sauces with the dumplings.
3. Sprinkle over with spring onion.

TADAAAAAAA, a warm dinner just ready in under 10 minutes.

有時人可以好懶, 特別當氣溫連十度都冇既時候, 餃子成為了不二之選.
本人覺得白菜豬肉餃子最岩配呢個汁.

一人份量的紅油炒手,簡單但好味.

餃子     X 10
蔥花     X 你鍾意
辣椒油 X 1湯匙
麻油     X 1湯匙
醬油     X 1湯匙
白醋     X 2湯匙

1. 餃子放滾水加蓋煮3分鐘,再撅蓋煮2分鐘.
2. 放入碗中加入以上調味汁, 食得.

每個人既口味,上面的份量只是一個参考, 鐘意辣的朋友仔自己想落幾多都唔洗就左咖.

Green tea Salmon (綠茶檸檬胡椒香煎三文魚)

Well salmon, how many ways you could cook your salmon?! Steam, sashimi, Grilled, pan fried?! Why not make it a little bit more fun? 



You Need


1 Salmon fillet
100g Green beans
1 Green tea bag
Lemon pepper x 1 tbs
Olive oil x 2 tbs
10g Cheddar cheese 
10g melted butter
1/3 lemon 
Prep Time: 10Minutes
Com Time: 10 Minutes


1. Mix up green tea leaves, lemon pepper and oil, massage it with    salmon, let it marinated for 10mins.

2. In the meanwhile, add in beans into boiled water with pitch of salt and few drops of olive oil, boil it for 3 minutes.

3. Heat up the pan, place the salmon in (fish skin side), Cook it for 3 mins with high heat, flip it to the other side and cook for another two minutes with medium heat, and cook the other two sides with 30 sec each .

4. Place the sweet beans onto the plate, followed by salmon, pour in butter and shave some cheddar cheese on the top and squeeze some lemon juice, sprinkle with black pepper.

綠茶檸檬胡椒香煎三文魚 

1. 準備一個綠茶茶包. MASTER FOOD LEMON PEPPER. 橄欖油. 
2. 混合好所以調味料腌十分鐘. 
3. 中火煎三分鐘, 反面煎二分鐘. 側面各30秒. 
4. 甜豆加橄欖油&鹽煮3分鐘. 
5. 上碟之後, 用微波爐加熱5G牛油二十秒後淋上碟. 
6. 加入新鮮黑胡椒碎&意大利乾酪&檸檬汁.

Crispy Potato Cake


You Need

Egg (one)    Potato (Big one)
Plain Flour (1 ts)  Water (half ts)
Lemon pepper ( 2 tbs)    Salt (half ts)  Pepper (half ts)
Japanese Mayo & hot pepper powder
Slice Peeler Shredder Edged Knife

Prep Time: 10 minutes
Cook Time: 10minutes

1. Shave potato with peeler.Dry it and sprinkle over with Lemonpepper x salt x plain flour.

2. Mix the egg with plain flour (Half ts) x water.

3. Divided shaved potatoes into 6 portions, place those Kids into a hot pan on high heat with olive oil.

4. Fry for 3 minutes then turn it to the other side, now put in egg mixture fry for another 2 minutes or until it becomes golden brown.

5. Garnish with fresh chives, Japanese Mayo & hot pepper powder according to your preference.

Beef Lovers

Beef Tartare

Brown Onion (Half) 
Capers (10)
Garlic (4 cloves)
Greek Yoghourt (1TBS)
Japanese Mayo (1ts)
Dijon Mustard   (1/2ts)
Olive Oil (1ts)

Prep Time: 10 minutes
Cook Time: 10 minutes

1. Marinated steak (Room Temp) with Olive Oil, Salt and pepper.
2. Mix all the sauces together, let it sit aside.
3. Heat up the pan for 5 minutes, stay in high heat, place the sexy steak in, fry for one minute only, turning it every few seconds to sear and encrust all the lovely flavoring on to it. Take it out and place it on to a plate to rest.
4. In the meanwhile, thinly slice up half onion and soak it in water then dry it.
5. Thinly slice up the garlic and fry it until it becomes golden brown color.
6. slice the seared steak and lay each slice on a board, season again lightly with black pepper and olive oil, sprinkle over with capers, fried garlices, onions and the mix sauce.


Creative Tips:

you may try coating your steak with roasted sesame and garlic granules if you like it a bit crunchy. or try it with Tabasco and Worcestershire sauce if you are a spicy lover.
